No-Bake Strawberry Cheesecake Squares
For the crust
1 cup almond flour
5 medjool dates, pitted
2 Tablespoons coconut oil
1/4 teaspoon sea salt
Pulse in a food processor until well combined. Press into a 8x8 baking dish (I line it with parchment paper first).
For the filling
1 10-ounce bag frozen strawberries, thawed
1.5 cups raw cashews
1/4 cup coconut cream*
1/4 cup water
1/4 cup maple syrup
2 Tablespoons coconut oil, melted
*place can in fridge ahead of time so it is solid when you scoop it out
Blend in blender until smooth. Pour over crust.
Optional: press fresh berries into the top for decoration.
Freeze overnight. Remove from freezer and let set for 5 minutes, then shimmy out of the pan and cut into bite-size pieces. Keep frozen until serving!
