MARCH. It's here! The beginning of this month got me thinking about my birthday, which got me thinking about Saint Patrick's Day (because that's my birthday), which got me thinking about this frosty mint goodness.
I had a hankering, so I dove into the vault to retrieve this recipe - it was originally posted on my Seacoast Online Healthy Living Blog a couple years back. I've dusted it off and spruced it up for you, my friend. Enjoy!
Mint Shake for 1
1 frozen ripe banana (you don't have to freeze the banana first, but it adds to the creaminess of the smoothie, so I highly recommend)
1 cup baby spinach
1 cup almond milk
1/3 cup coconut cream (the cream from top of a can of coconut milk)
1/2 tsp vanilla extract
1/4 tsp peppermint extract OR 1 drop high quality peppermint essential oil (I use this brand)
1 tsp honey
1 cup ice
1 Tablespoon cacao nibs*
*Optional, for my mint+chocolate combo fiends. Another yummy treat is to throw in a scoop of your favorite chocolate protein powder.
Blend all ingredients, adding the cacao nibs last if you are using.
