Summer is the best season to eat local!  The super fresh produce you get right from the farm doesn't need much in the way of flavor enhancement.  Shop your local farmers' market or farm stand and let the available fruits and veggies guide your next salad.

 

Simple Farmers' Market Salad

Chop, shred & toss any combination of veggies, greens & fruit.

Toss with a simple dressing and eat!

 

Here's the salad I constructed based on my most recent farmers' market pull

1 cup chopped broccoli, marinated with Bragg's Liquid Aminos & honey

Kernels of 1 ear of raw corn

1 small beet, shredded

1 small zucchini, shredded then pressed with a paper towel to remove excess liquid

1 handful basil leaves, chopped

1 handful blueberries

1/2 cup roasted red potatoes (leftover from last night's dinner)

Combine all ingredients in a bowl.  Toss with Orange Thyme Dressing.
